Stella's 5th Birthday swim party...I'm gonna try and name names..
Back row: Whit and Chloe, Chairs: Trevor Boone, Sol Jackson,
Austin Boone, Evan Huff, Eli Boone, Somebody Peevey,
In front: KK, Stella, Caroline King, August, Rose Jackson
and Julia Shepherd

At Farmfest you could pay $5
to have your picture taken with a
monkey on a leash, he did
put his hand on her neck...
and she's wearing that 5K medal....

Chloe's 2nd 5K, finished
with a time of 37 minutes and
got 1st in age group 11-12
(and she was the only one 11-12:))
She was so pumped about
getting a medal! :)

Our BBC crew before the Mucka 5/10K...
Everyone pictured got a trophy....Michael Hirons,
Beth Bradshaw (and a big thanks to her, she watched out
for Chloe after she finished the 5K while we were out on
the 10K) me & Jackie, Chloe and Martino

Farmfest had a Decorate Your Business Day and Grandad
and Memaw took it to a new level with Whit and Chloe....
the clinic got 3rd place out of 6 entered!  Pictured:
Austin & Trevor Boone, Whit (look at his face) and Chloe.
In back are Mickey Raffety and Grandad.  (Mick's doing good
he's in the 3rd year of chemo fighting off stage 5 cancer).
Memaw and Grandad brought turkeys, chickens, rabbits,
a donkey and 2 miniature horses....it was a long day and fun
that Whit and Chloe won 3rd place!

My garden is in full swing, look at the size of that there
squash.....:) It's been super dry and this week's forecast has
zero chance for rain....

Brookhill Ranch in Hot Springs....you can see CoCo behind
Tacie Matthews in the front row orange shirt...
Brookhill is very rustic, no air conditioning
and all those girls were in that cabin which is
about the size of my kitchen...it was HOT!

Their cabin was named the Fillies...Kelly Glover, Chloe,
Tacie Matthews, Jalie Matthews and Leah McNatt
(all girls from Wynne were in this cabin, I hope it's been a
good week....Chloe may never speak to me again since it was
my idea to go to camp for a week....:))

I had the Pointer, Magic, adopted out but she came back
because she acted weird around their 3 year old.  Magic
is totally house trained and a great house protector too.
She's ready for adoption if anyone wants a great bird
dog...I can attest to her being a great bird dog because
she murdered 2 of Chloe's chickens....

Another Birdeye Store stray, Tuesday, is going to her forever
home in Maine in 3 weeks.  I believe this sweatheart is a full-
blooded Labrador Retriever.  Spay/Neuter people!

I thought I'd give ya'll an update on the garden, camp, 5/10K, birthday parties, fosters and so on.  I took Chloe on Monday to Brookhill Ranch in Hotsprings to room with Kelly Glover for a week.  I've called/emailed to check on her twice and they said, "no news is good news".  It was hot as you know what on Monday, about 93 degrees, high humidity and barely a breeze.  I'm to pick her up tomorrow and I think I'll be taking Gumball and Biscuit with me as well as her IPad that I made a movie trailer of her dogs while she has been gone.

We ran the Mucka Mania 5/10K Farmfest weekend.  Chloe ran the 5K in 37 minutes and got first in her age group, she was really fired up.  Jackie and I ran the 10K and also got medals but only because there were about 30 entered.  Overall they had 160 participants and it was a well run event.  We're glad to have a local 10K to go to!

Jackie and I are doing the Gearhead Sprint Triathlon Sunday morning...we'll see how it goes, he's been sick all week with my Memorial Day cold I had.  I'll report on the tri next week!  Happy Summer Ya'll!

Slow Cooker Shredded Pork, Birdeye

Tuesday, June 5, 2012

At mom and Gary's skeet shoot in Little Rock that we try and make
every year, Gary made the remark that this "is redneck"
well, it's just a tap coming from outside a
refrigerator door...we saw lots of this in college..
we were there the weekend after Chloe's birthday.
A view from our seat...look at Gary's plate.  This
is how you're served at a skeet shoot, they had
dinner catered by a local fish restaurant and it
was great!  It's always fun to catch up with mom
and Gary and have yet another partee for Chloe!

The ingredients....

Mom's Mother's Day photo...isn't it fabulous?
Chloe's so swwweeeeetttt!  Yes, Biscuit
does need to be on a diet or Lean Cuisine...

This is a photo of Chloe's 2nd birthday partee...it's Chloe,
Lizze Brawner, Whit and Kate Davis...fun was had by all...
This was from Sunday's Time Trial.  It was Kyle Killough's idea and it
turned out to be a great day!  We had 11 riders, lots from our
BBC club and some Jonesboro and Wynne guys rode.
Race results are at racesonline under Birdeye Time Trial.
This is Stella Smith, Becca Jackson, Martin & Kara Smith,
Cecelia Killough, Whit Smith, Beth Huff, Chloe, me and Jackie,
Chuck Blanton, Kyle Killough, Neall and Sol Jackson, Mark
Pierce and his wife and Tony Watts.

I found this slow cooker recipe while watching one of my favorite channels in all the land, the Cooking Channel.  It's so dang easy and was delicious.  There's nothing like coming home on a week night to dinner that's ready baby! :)  So here's how it goes....I've also added some photos from the last couple weeks...we've been busy with her birthday, Brooklyn, the Time Trial and that big, weedy garden!  Here's the recipe from Kelsey Nixon with my substitutions...

Slow Cooker Shredded Pork

1 15 oz. can tomato sauce
3 T. Chili powder
3 T. brown sugar
2 t. ground coriander (I used dried dill)
1 t. ground cumin
1-3lb pork shoulder or butt, trimmed of excess fat
salt and pepper
5 cloves garlic, minced or grated
2 yellow onions, diced
1/4 C fresh lime juice

Combine first 5 ingredients in the base of your slow cooker.  Stir well.  Sprinkle the pork with salt and pepper and add it to the cooker.  Turn the pork to coat it evenly.  Add the garlic and onions and stir.  Place like on and cook on low 8-10 hours or high 4-6 hours.

Transfer the pork to a plate and allow to cool and shred using 2 forks, removing any excess fat (and by george, there was a ton of fat even though I took most all of it off beforehand). Skim any excess fat of the sauce remaining the the cooker.  Stir in lime juice and season with salt and pepper.  Add the pork back into the cooker and stir.  I served this on whole wheat buns and it was delish.  You can store the pork in the sauce for 3-4 days and it makes for easy sandwiches later in the week.
